The Story
Plant-based before it was a movement. Green awnings shaded a storefront packed with wooden shelves of soy products, wheat gluten, and things that looked like burgers but were not. The owner was a former commune dweller who spoke about saving the planet between bites of a lentil patty. A hand-painted sign in the window read "The Future is Meatless" and forty years later, the world would finally agree.
